We've discussed this before recently.  The reasoning is that you can see when a Grade 5 is being stretched past it's limits.  A Grade 8 will sheer with no advance warning.

its because the grade 5 bolts will bend a bit before shearing off. where grade 8 are more "brittle" and will shear without bending much.
